ZUCCHINI CASSEROLE

One Sunday during church last summer, Ms Patty gave children up front for the Childrens Moment each a puppet depicting a different profession. During the session, she asked the group, What is a minister? Nates hand shot up of course and he said, A minister is a person who gets up and talks to you. During the lesson, however, the puppets began to act up. Nates and Isaacs puppets began to fight and then little Emma Messers and Isaacs puppets got into an entanglement. Emma is a little under two years younger than Isaac. When in Sunday School class, she always wants to sit by Isaac and talks to him ALL the time. We think she likes him. Well, whats NOT to like, I say?

The Recipe

It is always a special event to M.E. when I become reacquainted with a student I had way back when in fifth or sixth grade! Such was the case with Chuck Stoyonovich (Grade 6 at School #88) who works where Butch King does. It didnt take long for Chuck to share a recipe with M.E. Chuck was also at our auction and I was thrilled he got the particular hair picture of ours that he wanted. There are all sorts of ways to fix zucchini casseroles out there in Recipe Land but this one is especially good. See if you dont agree.

1/2 pkg. small diameter sausage links
2 b. zucchini
1 lb. ground sausage
Salt to taste
Garlic to taste
1 lb. shredded cheddar cheese
1 can cream of mushroom soup, undiluted
1 onion, chopped
Bread crumbs or small garlic croutons
Peel and cut squash into1-inch slices. Remove seeds and cut into cubes. Steam until tender and drain WELL.
Brown meat and onions with salt and garlic. Drain excess grease.
Make layers of: squash, meat, cheese and soup. Repeat.
Sprinkle bread crumbs on top.
Bake at 350 for 45 minutes.
