Z PIE

Well, last October, our kids had twice the popcorn products to sell since BOTH boys were Cub Scouts. To sell the popcorn products, the parents decided to have both boys go to each house together with Daddy in the background and Mommy in the car with the goods. Each boy would take a turn to do the talking while the other one would hand over a list of what was being sold. After discussing what they should say to each prospective customer, Mattie had the boys practice on her by coming to their front door and she answering their knock. So, Mommy Customer showed delighted surprise at seeing two oh-so-cute and eager Cub Scouts at her door. Nate explained that they were selling popcorn products so that they could have summer camp, special events and the Pinewood Derby among others. Mattie was encouraged to look over the list proffered by the Tiger Cub Scout. Mattie said she would buy two items. Then Nate said, You get the cash and Ill get the corn!

The Recipe

I was talking with Norma Carson of Rockcreek Township in Bartholmew County, Indiana, one day and she mentioned a new recipe she was going to fix. NOTHING perks my ears up like the mention of a recipe! Using that old standby squash, Zucchini, this makes a delicious custardy type of pie. I like that you dont have to deal with a pie crust as it makes its own. Norma told M.E. she thinks her that hubby, Jim, will like the pie as long as she does not tell him about the Z! Since I have never heard otherwise, I think Jim went for it.

1 C. zucchini peel, cook, drain well
1 C. Milnot
1 C. sugar
1 1/2 T. butter
2 T. flour
1 egg
Cinnamon sugar mixture

Mix together until very smooth.
Pour into a pie pan that has been buttered or Pam sprayed.
Sprinkle cinnamon sugar mixture evenly over top of pie.
Bake at 375 degrees for 10 minutes.
Turn oven up to 425 and bake for another 20 minutes.
Let cool completely before serving.

NOTE: I added 1 t. of vanilla to the batter. I have the habit of putting that extract in anything sweet! m.e.
