OOEY GOOEY CHEWY COOKIE BARS

Mattie took Nate and Isaac to school early one day in February when she was subbing for a gal in the office. There just happened to be Addison, a girl from Ikes room there early as well due to relatives working at the school. Ike animatedly greeted the little girl and she gave him a hello then had to leave. Mattie asked Ike if Addison was his girlfriend and he informed her she was. Does Addison know she is your girlfriend, Isaac? and then, putting a finger up to his lips Isaac vigorously shook his head and said, Id like to keep it a secret! Isaac was looking forward to giving Addison a valentine. Of course, he gave everyone in his class a 3-D dinosaur valentine!

The Recipe

I have enjoyed a series of books by mystery writer Joanne Fluke. Each book is a fun read and there are cookie recipes as well. What a winning combination! In her Cherry Cheesecake Murder was this recipe that Mattie tried and liked very much. I bet you will too. The name for these delectable bars is a real hoot. By the way, in case you were wondering, I e-mailed the author and got her permission to use the recipe in my column.

Crust: 1/2 C. sugar
1/4 C. flour
1/4 t. salt
1/2 stick BUTTER, melted

Filling: 2 C. milk chocolate chips
3 C. mini marshmallows, packed down in cup
1 1/2 C. flaked coconut, packed down
1 C. chopped nuts
1 can (14 oz.) sweetened condensed milk

Mix crust ingredients in bowl. Drizzle melted butter over. With fork, mix until resembles small beads.
Spray 9x13 pan. Dump in crust mixture and pat down with a metal spatula, shaking to cover evenly.
Sprinkle chips over evenly, then the marshmallows, then the coconut and lastly the nuts. Press down with spatula.
Pour condensed milk evenly over the top.
Bake at 350 for 25 30 minutes or until nicely browned on top.
Let cool in pan on a rack. When cool, cut into brownie-sized pieces.
