HEAVENLY HASH PIE

CHIKN SANWICH by Damien Lashley
3 pieces of chiken
3 big cut up slices of spingch
1 slice of white cheese
2 pieces of bread
1 slice of lettuce
First put the chiken on the two slices of bread. Then cut the spingch and put it on the bread. Put the1slice of white cheese on the bread. Put the one slice of cut up lettuce on the bread. And you will have three sanwichs.

The Recipe
This is the time of year to fix something that makes us all think of balmy spring days. This recipe that my sisters friend, Cooky Thomas, served her last fall should do the trick.
1/3 C. lemon juice
1 C. (10 oz.) drained crushed pineapple
1 C. drained mandarin oranges
3 1/2 C. flaked coconut, toasted
1 8 oz. carton Cool Whip
1 C. Eagle Brand condensed milk
2 graham cracker pie crusts
1. Mix lemon juice with milk.
2. Add fruit and coconut.
3. Fold in the Cool Whip.
4. Spoon into crusts and refrigerate for at least 4 to 5 hours.
5. For crusts, follow directions on the box of graham crackers.
NOTE: Cooky prefers Keebler graham crackers, or buy already packaged crusts. Cooky uses the bottled lemon juice. I found that one can use the lowered or lite whipped topping and condensed milk for this. Fat free does not work, however. M.E.
