FISH POTATO CASSSEROLE
Watching car races on TV is a favorite past time at the Krautheim household. One day, the parental units were sitting at the table eating their meal while the boys were allowed to be down on the floor nearer to the TV. Nate early on picked his favorite driver, Tony Kanaan, who drives in the IRL in the 7-11 car no less. Why was this particular driver chosen? It was obvious to Nate. Tonys car was GREEN! Any color as long as it is green! Well, during this particular race they were all watching, Tony crashed his car early on and was put out of commission. Before Mattie knew it, Nate was at the table finishing his meal. When asked why the change of venue, Nates answer was, Tony is out of the race so there is no need to watch it anymore! With no spot of green to watch, Nate was not interested!
The Recipe
We became acquainted with our Amish friends, Bill and Emma Miller of Milroy, many years ago. It has been fun watching their five delightful children grow up. We were fortunate enough to be invited to ALL of their weddings! Every once in awhile, we get a hankerin for what we call a Miller Fix because whenever we stop for a visit, they ALWAYS stop whatever they are doing and we sit and have the best visit! Emma shared this different and delicious casserole recipe with M.E. many moons ago.
FISH POTATO CASSSEROLE
2 large potatoes, peeled and sliced
1 medium onion, sliced thinly
Salt and pepper to taste
1-lb. haddock
2 T. parsley, minced
1 clove garlic, minced
1 small hot pepper, minced
3 T. olive oil
Layer 1/2 of potatoes and onions in a 1 1/2 quart and oiled casserole.
Sprinkle with salt and pepper.
Cut fish in 4 pieces and arrange over the veggies.
Sprinkle with the parsley, salt, pepper, garlic and hot pepper.
Drizzle with half of the oil.
Layer remaining potatoes and onions on top.
Sprinkle with salt and pepper.
Drizzle remaining oil.
Bake at 375, covered, for 35 minutes; uncover and bake another 30 minutes.
NOTE: I used a light sprinkling of red pepper flakes in lieu of the minced hot pepper and this worked great. m.e.
