BREAKFAST SAUSAGE PATTIES

My mother trained to be a teacher at Madam Blakers in Indianapolis, I was a teacher, my husband taught as did my younger sister, so it was no surprise to M.E. that Mattie made up lesson plans for a session of school every week day during the boys summer break. She got too busy to do this last summer and realized that skills were lessened when school began in the fall. Isaac needed special help with writing his letters. Mattie would have him work on one or two each day by having the child write a whole line of each letter. Isaac grumped about having to do so many. He soon learned not to crowd the letters (kissy close he called them) but to leave space so he would not have to write so many. He is a sly one, that Isaac!

The Recipe

This way of making breakfast sausage patties is a tad bit of trouble but oh! SO worth it. Before he was our son-in-law, Stephen was served these when visiting and pronounced them very good. See what your family says about them.

1 1/2 lb. ground pork
1/3 C. green onions, sliced thinly; include green tops
1/2 t. paprika
1 T. oregano
1 T. rosemary, crushed
2 cloves garlic, minced
1 T. finely minced parsley
1 t. salt
1/2 t. pepper
1/2 t. cayenne
1 T. olive oil

1. Mix all the above together thoroughly in order to blend well.
2. Cover and let set in fridge overnight.
3. Form into 3-inch patties.
4. Saute until crisp, about 10 minutes.
5. Serve.
